- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup peeled and diced apples
- 2 tablespoons brown sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, cream the softened butter with granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the diced apples and brown sugar until evenly distributed.
- Using a spoon or cookie scoop, drop tablespoon-sized dough portions onto the prepared baking sheet.
- Bake for 12–15 minutes or until edges are lightly golden, then cool on a wire rack.
Notes
- For softer cookies, store in an airtight container within a day.
- Chilled dough will spread less and yield thicker cookies.
- Substitute apples with pears for a different flavor twist.
- Add a drizzle of icing sugar glaze for extra sweetness.
