Description

Velvety banana batter bakes into a tender crumb while cinnamon-scented streusel forms a crunchy topping. Each slice offers warm banana sweetness and buttery crumble that pairs perfectly with your morning coffee.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup mashed ripe bananas
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter cold

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch square baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon; set aside.
  3. In another bowl, combine 1/2 cup flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and cold butter; use a pastry cutter or fork to form coarse crumbs and set streusel aside.
  4. In a large bowl, cream 1/2 cup softened butter with granulated sugar and 1/2 cup brown sugar until light and fluffy.
  5. Beat in eggs one at a time, then stir in vanilla and mashed bananas until just combined.
  6. Alternately add the dry flour mixture and buttermilk, beginning and ending with the flour mixture, mixing until just incorporated.
  7. Spread half of the batter into the prepared pan, sprinkle half of the streusel over the batter, then top with the remaining batter and streusel.
  8. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the coffee cake to cool in the pan on a wire rack for at least 15 minutes before slicing and serving.

Notes

  • Cake can be stored in an airtight container at room temperature for up to 3 days
  • Substitute sour milk for buttermilk by adding a teaspoon of vinegar to regular milk and letting it sit for 5 minutes
  • Use very ripe bananas for maximum sweetness and moisture
  • Serve warm or at room temperature with a cup of coffee or tea
