Description

Chunks of pineapple, mango, papaya, and more are coated in tangy lime-honey dressing, then crowned with shredded coconut and fresh mint. Chilled before serving, each bite is cool, juicy, and refreshingly aromatic.

Ingredients

  • 2 cups pineapple chunks
  • 1 cup mango chunks
  • 1 cup papaya chunks
  • 1 cup strawberry halves
  • 1 medium banana
  • 1 cup orange segments
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • 1/4 cup shredded coconut
  • 2 tablespoons chopped fresh mint

Instructions

  1. Peel and chop pineapple, mango, papaya, banana, and oranges into bite-sized pieces.
  2. Hull strawberries and slice them in half.
  3. Place all prepared fruits in a large mixing bowl.
  4. In a small bowl whisk together lime juice and honey until smooth.
  5. Pour the dressing over the fruits and toss gently to coat evenly.
  6. Sprinkle shredded coconut and chopped mint over the salad and toss lightly.
  7. Cover and chill for at least 30 minutes before serving.

Notes

  • Use ripe, but firm fruits to maintain texture.
  • Adjust honey and lime juice to taste for sweetness and tang.
  • Serve immediately after chilling to preserve freshness.
  • Store leftovers in an airtight container and consume within 1 day.
