Description

Vibrant blue gelatin shimmers beneath a creamy coconut layer, topped with sweet pineapple ‘sand’, shredded coconut waves, and cheeky gummy fish. Each chilled spoonful offers a playful blend of tropical flavors and textures.

Ingredients

  • 2 packages blue gelatin mix
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup coconut yogurt
  • 1 cup vanilla yogurt
  • 1/2 cup crushed pineapple
  • 1/4 cup shredded coconut
  • 10 pieces fish-shaped gummy candies
  • 4 leaves fresh mint

Instructions

  1. In a bowl, combine the blue gelatin mix and boiling water, stirring until completely dissolved.
  2. Stir in the cold water, then carefully pour the blue gelatin into clear glasses or jars to form the water layer.
  3. Refrigerate the glasses for about 20 minutes until the gelatin is semi-firm.
  4. Spoon coconut yogurt evenly over the gelatin layer, then chill for another 15 minutes until set.
  5. Top each parfait with crushed pineapple to represent sand and shredded coconut as frothy waves.
  6. Gently press fish-shaped gummy candies into the gelatin layer to resemble tropical fish.
  7. Garnish with fresh mint leaves and serve chilled.

Notes

  • You can swap vanilla yogurt for strawberry for a rosy coral effect.
  • For firmer layers, allow each layer to chill longer until fully set.
  • Substitute coconut yogurt with whipped cream for a creamier texture.
  • Prepare 1 day ahead for easier assembly and optimal chilling.
