Description

Warm buttered rye turns golden-crisp as sizzling beef patties meet gooey Swiss and lusciously sweet onions, creating a melty, savory stack that’s perfect for a comforting lunch or dinner.

Ingredients

  • 4 slices rye bread
  • 4 slices Swiss cheese
  • 8 ounces ground beef
  • 1 small onion
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 4 tablespoons Thousand Island dressing (optional)

Instructions

  1. Peel and thinly slice the onion.
  2. Heat 1 tablespoon of butter in a skillet over medium heat and cook the onion until caramelized, about 8–10 minutes. Transfer onions to a plate and set aside.
  3. Season the ground beef with salt and pepper and shape into two thin patties.
  4. Add the remaining 1 tablespoon of butter to the skillet over medium heat. Cook the patties 3–4 minutes per side for medium doneness.
  5. Assemble each sandwich by layering one slice of bread, one slice of Swiss cheese, a beef patty, half the caramelized onions, another slice of Swiss cheese, and top with a second slice of bread.
  6. Wipe the skillet clean if needed, return to medium-low heat, and cook sandwiches 2–3 minutes per side until the bread is golden brown and the cheese is melted.
  7. Remove sandwiches from the skillet, let rest for 1 minute, cut in half, and serve with Thousand Island dressing if desired.

Notes

  • A cast iron skillet gives the best crust and even browning.
  • Substitute cheddar or Gruyère for Swiss cheese for a different flavor.
  • Let assembled sandwiches rest briefly before slicing to keep the cheese from oozing out.
  • Store leftover patties and onions separately in the fridge to maintain their textures.
