- 1 box white cake mix with pudding
- 3 large eggs
- 1/3 cup vegetable oil
- 2 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 can 20 oz crushed pineapple undrained
- 1 can 14 oz sweetened condensed milk
- 8 oz whipped topping
Instructions
- Spray the inside of the crockpot with nonstick cooking spray.
- In a large bowl combine the cake mix, eggs, vegetable oil, shredded coconut, and chopped pecans until just blended.
- Spread the batter evenly across the bottom of the crockpot.
- Pour the crushed pineapple and its juice evenly over the batter.
- Cover and cook on low for 2 hours, or until the center is set and a toothpick comes out clean.
- Pour the sweetened condensed milk evenly over the hot cake, then cover and let sit for 10 minutes to soak in.
- Spread the whipped topping over the surface before serving.
Notes
- For easier serving, line the crockpot with parchment paper or foil before adding ingredients.
- Use low heat to prevent the cake edges from browning too quickly.
- Toast the pecans briefly in a dry skillet for a deeper nutty flavor.
- Serve warm with a scoop of vanilla ice cream for an extra indulgence.
