Description

Sweet corn, cherry tomatoes, red bell pepper, and fresh cilantro mingle with crunchy Fritos in a zesty mayonnaise-sour cream dressing. Chilled for 30 minutes, it’s a refreshing, flavor-packed side ready to brighten your next gathering.

Ingredients

  • 2 cups Fritos corn chips, crushed
  • 1 can corn kernels, drained
  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine crushed Fritos, corn kernels, cherry tomatoes, red bell pepper, red onion, and cilantro.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and black pepper until smooth.
  3. Pour the dressing over the corn mixture and toss gently until everything is evenly coated.
  4. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  5. Give the salad a final toss before serving.

Notes

  • Add the Fritos just before serving if you prefer extra crunch.
  • Stir in a diced jalapeño for added heat.
  • You can swap sour cream for Greek yogurt for a lighter option.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
