Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, black pepper and garlic powder.
- Heat olive oil in a skillet over medium-high heat and sear the chicken until golden, about 2-3 minutes per side.
- Transfer the seared chicken to a baking dish.
- In the same skillet, reduce heat to medium and pour in heavy cream and milk, stirring to combine.
- Add Gorgonzola cheese and thyme leaves to the cream mixture, stirring until the cheese melts into a smooth sauce.
- Pour the cheese sauce evenly over the chicken, then sprinkle shredded mozzarella on top.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Notes
- For a crispier top, switch the oven to broil for the last 2 minutes of baking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Substitute Gorgonzola with Roquefort or another blue cheese for a stronger flavor.
- Serve alongside steamed vegetables, mashed potatoes or rice for a complete meal.
