Description

Zesty lemon dressing and aromatic basil wrap around each bite of al dente pasta, punctuated by juicy cherry tomatoes and a hint of Parmesan. Chill for vibrant flavors that pop in every forkful.

Ingredients

  • 8 ounces fusilli pasta
  • 1/2 cup chopped fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Drain the pasta and rinse under cold water to cool it quickly.
  3. In a small bowl whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
  4. In a large bowl combine the cooled pasta, dressing, basil, tomatoes, and Parmesan cheese.
  5. Toss gently to coat everything evenly and adjust seasoning if needed.
  6. Refrigerate for at least 30 minutes before serving.

Notes
