Description

Warm, golden edges yield to a soft, gooey center bursting with sweet dates. Each bite mingles hearty oats, brown sugar, and a whisper of cinnamon, filling your kitchen with a toasty, comforting aroma.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter softened
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped dates

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl combine rolled oats, whole wheat flour, baking soda, salt, and ground cinnamon.
  3. In a separate bowl cream together softened butter and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until the mixture is smooth.
  5. Gradually stir the dry ingredients into the wet mixture until just combined, then fold in the chopped dates.
  6. Drop tablespoonfuls of dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
  7. Bake for 10 to 12 minutes or until the edges are lightly golden, then let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For extra soft cookies remove them from the oven at the 10 minute mark.
  • Soak dates in warm water for 10 minutes to ensure they are plump and moist.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
  • You can add chopped nuts or a sprinkle of sea salt on top for variation.
