Description

Smoky sausage slices roast with sweet peppers, crisp broccoli, and garlic, all kissed by olive oil and thyme. A sticky maple-Dijon drizzle caramelizes to glossy perfection, filling your kitchen with warm, savory-sweet aromas.

Ingredients

  • 1 pound smoked sausage, sliced
  • 2 tablespoons olive oil
  • 1 medium red onion, cut into wedges
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 4 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon pure maple syrup
  • 1 teaspoon fresh thyme leaves
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl combine sausage, red onion, red bell pepper, yellow bell pepper, broccoli, garlic, olive oil, thyme, salt, and pepper. Toss until everything is evenly coated.
  3. Spread the mixture in a single layer on a rimmed sheet pan.
  4. Bake for 20 minutes, stirring once halfway through cooking.
  5. Meanwhile whisk together Dijon mustard and maple syrup in a small bowl to make the sauce.
  6. Remove the sheet pan from the oven and drizzle the maple Dijon sauce over the sausage and vegetables. Toss gently to coat.
  7. Return to the oven for an additional 5 minutes, allowing the sauce to caramelize slightly.
  8. Remove from oven and serve hot.

Notes

  • Use chicken, pork, or turkey sausage based on preference.
  • Swap or add vegetables such as zucchini, carrots, or Brussels sprouts.
  • Leftovers keep in an airtight container in the refrigerator for up to 3 days.
  • For a spicy kick, sprinkle with red pepper flakes before baking.
