Description

Crunchy tortilla chips mingle with seasoned beef, black beans, and diced chilies, all crowned by bubbling cheddar. A dollop of sour cream and fresh green onions add cool, crisp contrast in every bite.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 10 ounce can diced tomatoes and green chilies
  • 15 ounce can black beans drained and rinsed
  • 4 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese
  • 0.25 cup sliced black olives
  • 0.25 cup chopped green onions
  • 0.5 cup sour cream
  • 0.5 cup salsa

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef until no longer pink, then drain excess fat.
  3. Stir in the taco seasoning mix, diced tomatoes with their juices, and black beans; simmer for 3–4 minutes.
  4. Spread half of the crushed tortilla chips in the prepared baking dish, pour the beef mixture evenly over the chips, then top with remaining chips.
  5. Sprinkle shredded cheddar cheese and sliced black olives over the top.
  6. Bake for 15–20 minutes until the cheese is melted and the casserole is bubbly.
  7. Remove from the oven and let rest for 5 minutes, then dollop with sour cream, spoon on salsa, and garnish with chopped green onions before serving.

Notes

  • Serve immediately for the best crunch from the chips
  • Customize toppings with jalapeños, cilantro, or avocado slices
  • Store leftovers in an airtight container in the refrigerator for up to 3 days
  • For a vegetarian version, substitute ground beef with cooked lentils or shredded jackfruit
