Description

Warm apple chunks tossed in cinnamon spice bake beneath a soft, buttery snickerdoodle batter, bubbling with sweet juices and a crackly cinnamon-sugar crust. Serve straight from the oven for irresistible cozy bites.

Ingredients

  • 2 cups peeled diced tart apples
  • 1 tablespoon lemon juice
  • 1/4 cup unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and grease a 9-inch baking dish.
  2. Toss the diced apples with lemon juice and spread them evenly in the prepared dish.
  3. Sprinkle the light brown sugar and ground nutmeg over the apples.
  4. Place the butter in the dish and melt it in the oven for 2 to 3 minutes, then remove carefully.
  5. In a mixing bowl whisk together the flour, granulated sugar, baking powder, salt, and the first measure of ground cinnamon.
  6. In a separate bowl beat the egg, then stir in the milk and vanilla extract until combined.
  7. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  8. Pour the batter over the melted butter and apples in the dish without stirring.
  9. In a small bowl combine the remaining granulated sugar and ground cinnamon; sprinkle this mixture evenly over the batter.
  10. Bake for 30 to 35 minutes, or until the top is golden and a toothpick inserted into the batter comes out clean.
  11. Allow the cobbler to cool for 10 minutes before serving warm.

Notes

  • For extra gooey texture serve with a scoop of vanilla ice cream.
  • Use tart apples like Granny Smith for a nice flavor contrast.
  • Adjust the cinnamon sugar topping to your taste preference.
  • Store leftovers covered in the refrigerator for up to two days.
